Wild Rice No-Meat Loaf

 
WILD RICE NO-MEAT LOAF
(vegan, gluten free – egg free, dairy free)
1/2 cup uncooked wild rice
1 can red kidney beans, rinsed and drained
2/3 cup walnuts, chopped
1/4 cup raisins, chopped
1/4 cup dried cranberries, chopped
1 medium onion, diced fine
2 tbsp milled flax seeds
1/2 cup gluten-free bread crumbs
2 springs of fresh oregano
1/2 tsp ground pepper or more to taste
1 tsp sea salt or more to taste
1/4 tsp cayenne pepper
