Ingredients:
2 cups (500 mL) rolled oats
1 cup (250 mL) Naosap Harvest Wild Rice Flour
1/2 cup (125 mL) Manitoba Harvest Shelled Hemp Seed

2 tbsp (30 mL) chia seeds
1/3 cup (75 mL) brown sugar
1 tsp (5 mL) cinnamon – I added 2 tsp.
1 cup (250 mL) raisins or dried fruit – I also added a handful of chocolate chips
1/2 tsp (2 mL) salt
1/3 cup (75 mL) honey
1 egg, beaten
1/4 cup (60 mL) oil
3/4 cup (175 mL) unsweetened apple sauce (add more = chewier)
2 tsp. (10 mL) vanilla extract
Directions:
Preheat oven to 350 F. Oil a 9 X 13 inch (22 X 33 cm) baking pan.
In a large bowl, mix together the oats, flour, hemp seed, brown sugar, cinnamon, raisins, chocolate chips and salt. Make a well in the center, set aside.
In a small bowl, combine honey, egg, oil, apple sauce and vanilla. Add liquid ingredients to well and mix. Pat the mixture evenly into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, until bars begin to turn golden at the edges. Cool for 5 minutes, then cut bars while still warm. ***Do not allow bars to cool completely before cutting, or they will be too hard to cut.***
Our school is nut-free, so I did not add them. You could add a variety of dried fruits, nuts, chia seed, etc.
My kids have raved about these and are waiting for me to make more. They all took extra in their lunches to share with classmates. Healthy and yummy – who could ask for more?
