This is one of my kids favourites. Thank you to Rai Adhar for submitting this to our wild rice recipe contest
Gluten Free3 cups cooked wild rice
2 eggs
2 tbsp. butter, melted
1 cup pizza sauce (I use my own canned sauce)
1 1/2 cups shredded mozzarella
Toppings of your choice – mushrooms, onions, peppers,tomatoes, ham, pineapple, etc.
Instructions:
Preheat oven to 450 degrees
Add beaten eggs and butter to the rice and mix well.
Press the mixture in to a greased or lined pizza pan.
Spread the sauce over the wild rice.
Sprinkle with some of the mozza, add your toppings and top with more mozza.
Place the pizza in the middle rack and cook for 12 – 15 minutes.
Slice and serve immediately.
